Before steamships, coffee moved across the planet in slow wooden sailing vessels. Green coffee would “age” during the voyage to America and the resulting “mellow” flavor became prized by consumers as did coffees from Yemen and Java. Monsooned coffee seeks to replicate these sea voyages. Green coffee is spread out on the floors of warehouses with roofs but no walls, exposing the beans to the wet winds of monsoon season on the west coast of India for 3 or 4 months. This process results in coffee that is full bodied, savory, and low in acidity.
